Why flatten the meat first?

A thick loaf needs slicing. A thin sheet gives you meat you can tear into doner-style strips after cooking. The baking paper makes the mince easier to roll without sticking to your rolling pin.

For browned, crispier edges like the pan finish shown in the video, give the shredded meat a quick fry after baking.

Ingredients: serves 4

  • 1kg minced meat of your choice
  • 1 large onion, blended
  • 1 garlic clove, crushed
  • 1 tablespoon tomato paste
  • 1 tablespoon plain yoghurt
  • 4 tablespoons Baharat Doner Seasoning

To serve: rice and salad, or warm pita bread with shredded lettuce, sliced red onion and your favourite sauce.

Equipment: a mixing bowl, rolling pin, baking tray, food thermometer and baking paper rated for 220°C. Check the paper's packaging before using it.

How to make the viral doner sheet bake

  1. Mix the ingredients. Preheat the oven to 220°C. Combine the mince, blended onion, garlic, tomato paste, yoghurt and Doner Seasoning. Mix thoroughly until evenly seasoned and cohesive.
  2. Place between baking paper. Put the mixture on a sheet of baking paper and cover with a second sheet. For easier handling, divide the mixture into smaller batches and repeat with separate sheets.
  3. Flatten with a rolling pin. Roll into a thin, even layer, roughly 3–5mm thick. Avoid leaving thick patches in the centre.
  4. Roll up and bake. Remove the top sheet. Use the bottom sheet to roll the meat up, keeping baking paper between the layers. Place the rolls on a baking tray and bake for around 20 minutes at 220°C. Treat this as a guide: roll size, meat choice and ovens vary. Check the thickest part with a clean food thermometer; it should reach 75°C for at least 30 seconds. Cook longer if needed.
  5. Unroll and shred. Carefully open the hot paper, allowing steam to escape. Remove all the baking paper and shred the cooked meat into strips. For crispier edges, briefly fry the strips in a hot pan, in batches.
  6. Serve. Add the doner to rice and salad, or pile into warm pita with lettuce, onion and sauce. Serve straight away.

Three tips for a better batch

  • Keep the sheet thin. Even thickness gives you more consistent cooking and makes shredding easier.
  • Mix before you roll. Loose, unevenly mixed mince is more likely to crumble. Thorough mixing helps it hold together.
  • Finish in small batches. If you fry the strips, leave space in the pan so they brown rather than steam.

Questions before you try it

Which mince should I use?

Use the meat you enjoy: beef, lamb, a beef-and-lamb mix or chicken mince. The result will vary. Very lean mince can dry out more easily; always check that the meat is cooked through.

Do I need a barbecue or a kebab machine?

No. This method uses your oven. A regular frying pan is optional for the final browning step.

Will it have the same texture as doner from a shop?

This is a home-cooking method for thin, seasoned doner-style strips. Flattening the meat and finishing it in a hot pan helps you get browned edges. A commercial spit cooks differently, so expect your own homemade version rather than an identical texture.

Is one jar only enough for this recipe?

No. This batch uses 3 tablespoons, rather than the whole jar. Measure what you need and keep the rest for your next kebab night.

What is in the Favourite Collection?

Doner, Chicken Shish, Shawarma and Kofte: four blends for £34.99. That saves £4.97 against buying those jars separately at their current individual prices. Meat, bread and sides are purchased separately.

What about allergies?

Baharat Doner Seasoning contains celery. This recipe also uses yoghurt, which normally contains milk, and standard pita bread normally contains wheat.
