Soft, caramelised sweet potatoes with almost no effort, loaded with salty feta, fresh herbs and a little Baharat Kofte Seasoning.
This is one of those recipes where the slow cooker does nearly all the work. Put the sweet potatoes in, leave them alone for four hours, then finish them with a fresh herby feta topping.

Ingredients
Serves 3–4
For the sweet potatoes:
- 3 large sweet potatoes
- 1 red pepper, finely chopped or sliced, optional
For the herby feta crumble:
- 200g feta
- Large handful fresh flat-leaf parsley, roughly chopped
- 1–2 tbsp Baharat Kofte Seasoning
- Freshly ground black pepper, optional
The Kofte blend contains cumin, onion, chilli flakes, black pepper, coriander, herbs and warming spices, so it works surprisingly well beyond traditional kofte.
Method
1. Prepare the sweet potatoes
Wash and dry the sweet potatoes, then prick each one several times with a fork.
Place them whole into the slow cooker. There is no need to add water.
2. Slow cook
Cover and cook on HIGH for around 4 hours, or until the sweet potatoes are completely soft when pierced with a knife.
Cooking time can vary slightly depending on the size of your potatoes and your slow cooker.
3. Make the herby feta crumble
While the sweet potatoes are cooking, crumble the feta into a bowl.
Add the chopped parsley and 1 tablespoon of Baharat Kofte Seasoning.
Mix everything together, taste and add a little more seasoning if you want a stronger flavour.
4. Open the sweet potatoes
Once cooked, carefully remove the potatoes from the slow cooker.
Slice them lengthways and gently open them up. The inside should be soft, fluffy and naturally caramelised.
5. Load them up
Top generously with the herby feta crumble.
Add chopped red pepper if you want some freshness and crunch.
Finish with another small sprinkle of Kofte Seasoning and serve immediately.
Why cook sweet potatoes in the slow cooker?
It sounds almost too simple, but it works.
Slow cooking traps the moisture inside the potato, so you get a really soft centre while the natural sugars become sweeter and richer as they cook.
There is also no boiling, peeling or constant checking. Put them in and get on with your day.
Make it your own
You can also add:
- chopped tomatoes
- cucumber
- red onion
- rocket
- avocado
- yoghurt or tzatziki
- chickpeas for extra protein
- grilled chicken if you don't want to keep it vegetarian
For an even more Turkish-style version, serve it with a spoonful of tzatziki alongside the feta and herbs.
