Ingredients
For the cabbage:

1 large flat Turkish cabbage
For the filling:

300g minced beef
-
400g short-grain rice
-
2 onions (approx. 200g total), finely chopped

50g fresh parsley, finely chopped

4 garlic cloves, minced

50ml water

30ml olive oil

2 tbsp tomato purée

2 tbsp red pepper purée
For the cooking liquid:

400ml water

2 tbsp tomato purée

1 tsp salt
-
50ml olive oil
For serving:

Yoghurt

Lemon juice
Instructions
1. Prepare the cabbage:

Using a large knife, carefully cut around the root of the cabbage and remove the core to loosen the leaves.

Place the cabbage upside down in a pot of boiling water.

Gently remove the leaves one by one as they soften. Be careful not to overcook the leaves—they should be pliable but not mushy.

Lay the leaves flat and cut out the thick central vein. Divide each leaf into quarters.

Keep any leftover pieces or broken leaves to line the bottom of the pot later.
2. Make the filling:

Combine the minced beef, rice, chopped onions, parsley, garlic, Baharat Kofte Seasoning (Shop Fresh, Authentic Seasonings), water, olive oil, tomato purée, and red pepper purée in a bowl. Mix until well combined.
3. Assemble the rolls:

Line the bottom of a large pot with leftover cabbage pieces to prevent sticking.
