Kofte, a beloved kebab, holds a special place in our hearts. It's hard to resist the allure of a succulent kofte nestled in flatbread, adorned with tantalizing Chilli Sauce and Garlic Sauce. Our recipe calls for a delightful blend of half beef and half lamb and a tablespoon of our Kofte Seasoning but if you prefer, you can opt for solely lamb mince. The key lies in selecting minced meat with a generous fat content, ensuring that the kofte remains moist and bursting with flavour.

If skewering poses a challenge, fear not! You can fashion these delectable morsels into petite burger-style patties. However, if you choose to skewer, remember to employ broad, flat skewers. Not only do they facilitate even cooking throughout the meat, but they also provide a larger surface area, preventing any unfortunate mishaps.

Here's what you'll need:

  • 250g Minced Beef (20% fat content)
  • 250g Minced Lamb (15% fat content or higher)
  • 1 tablespoon Kofte Seasoning
  • 30g Fresh Parsley, finely chopped

Cooking Instructions:

  1. In a large bowl, thoroughly combine all the ingredients. Dive in with your hands, ensuring an even distribution of parsley and the aromatic dry rub.

  2. When skewering, keep a bowl of water nearby. The secret lies in moistening your hands to prevent the meat from sticking. Divide the meat mixture into four equal portions and shape them into slightly elongated forms. Thread the skewer through the center of each portion, using one hand to gently flatten and guide the meat along the skewer. Apply gentle pressure from top to bottom, ensuring an even distribution of meat. Next, dampen your thumb and firmly press it along the length of each kofte to create enticing ridges. Repeat this process for the remaining three skewers.

  3. It's time to fire up the BBQ! Before cooking the kofte, ensure that the coals have settled completely. Due to their high fat content, they can easily flare up. Avoid the temptation to flip the kofte too soon. Wait until they effortlessly release from the grill before turning. Once they achieve a gorgeous char and are brimming with succulence, they are ready to be savored!
