Kofte Kebab is associated with several regions, from Turkey to India, what they have in common is they use a minced meat combined with onions and spices. They can be made with a wide range of meats and vegetables and even sometimes fish, which is more typical in Indian versions.

The Kofte Kebab can be shaped either as a ball, patties or sausage shape. This mince is where it gets its name as Kofte, translated this means to pound or to grind and Kebab means pieces of meat, fish, or vegetables roasted or grilled on a skewer or spit.

Our Kofte Kebab Seasoning is based on Turkish flavorings which they would traditionally serve in kebab houses, accompanied by Tzatziki or plain yoghurt.

Ingredients:

  • Himalaya salt
  • Garlic
  • Coriander
  • Cumin
  • Sweet Paprika

Method:

  • Add 3 tbsp of our blend to 500 grams of mince meat
  • Vegan or vegetarian replacement, use mashed eggplant, mushroom, or cauliflower
  • 3 tbsp yogurt
  • 1 tbsp milk
  • Grate 1 small onion and add to the mixture
  • Mix till combined
  • let sit for 1 hour or more 
  • Divide into eight balls, then roll each ball on a board with a cupped hand to turn them into ovals. 
  • Thread onto four metal or wooden skewers and brush with oil.
  • Cook on a griddle: heat the pan until you can feel a good heat rising and cook for 3-4 mins each side.
  • Don’t turn until they are well sealed, or the meat will stick to the grill or pan.
  • Serve the koftas with flat breads and Tzatziki or plain yoghurt

The jewel on the skewers

I bought kofta kebab mix from Baharat and put a pack of lamb and a pack of beef mince together and put the whole bag of spices in and blended it all together and put cling film over the bowl and left it in the fridge over night and the next morning I took it out and about half a hands worth of the mixture I formed it on the skewers and with all the mixture I got about twelve good sized skewers out of it and then did the same with my grill I turned them every ten minutes until they were cooked right through and then put them in pitta breads and they were amazing the taste was gorgeous and better than any one you get out of a kebab shop and am writing my list for next time and will definitely buy there spice mixes every time as they make the kebabs so delicious thanks Baharat.
