Lahmacun is a round, thin piece of dough topped with minced meat, minced vegetables and herbs including onions, tomatoes and parsley, and spices such as pul biber and cumin also called Turkish pizza. This recipe is by Zali’s cooking.

Ingredients:

For the dough, 20g fresh yeast or 1 pkt of dried instant yeast.
1 cup of warm milk
1 and a half cups of warm water
1 tsp of sugar
1 1/2 tsps of salt
60mls of oil or 2tbs of butter
5-6 cups of flour and extra for dusting

For the meat, 1 kg minced lamb
3 cloves of garlic
2 plump tomatoes
3 green Carliston peppers
3 Red Marconi peppers
1 large onion
A handful of chopped parsley
1 1/2 tbs tomato purée
1 1/2 tbs sweet pepper paste
1 tsp black pepper
1 1/4 tsp salt
1/2 tsp cumin powder
1 tsp of pul biber
100ml sunflower oil or 2 tbs of butter

Method:

In a food processor, blitz the onions, tomatoes, peppers and garlic(don’t purée the mixture) Add the blitzed veg to the mince lamb and add the chopped parsley, tomato purée, pepper paste and the rest of the ingredients including the oil. Mix all the ingredients and leave to marinade for at least half an hour. Next place an adequate amount of mince in the centre of your tortilla or dough. Use your hands to work and push the mince out to the edge of the tortilla. Place onto and oven tray and cook at 180c for around 7-9 mins or until the meat is cooked. Keep checking to ensure the mixture doesn’t dry out. Happy Cooking!
